I have to tell you, I am pretty tickled with myself this time. I have been craving a great ethnic noodle dishes and curry is one of my favorites! I recently came across Tofu Shirataki from House Foods. These tofu noodles have only 20 calories per serving and are fabulous! They come in small packs with 2 servings per pack and I found them at my local Krogers in the refrigerated organics section. I played with the spices and I am sure you can give or take a little depending on your tastes. Hope you enjoy!
½ cup Almond Coconut Milk
1 teaspoon Soy Sauce
2 teaspoons Curry Powder
1 teaspoon Garlic Powder
1 teaspoon Red Pepper Flakes (to taste)
1 teaspoon Corn Starch
½ teaspoon Salt
1-2 teaspoons Splenda Sugar Blend (you could use just Splenda or Truvia if you prefer)
As many veggies as you would like. I included:
1 package House Foods Tofu Shirataki Angel Hair
Sriracha Sauce (to add more spicy heat!)
To save time, I toss together the veggies in a bowl and microwave them for 3 minutes first. Heat a skillet and spray with a touch of Pam. Add in all veggies and stir fry until tender.
During this time, cut open the package of House Foods Tofu Shirataki Angel Hair and rinse well with hot water. I use a colander and allow that to run under the hot water while I am working with the veggies.
To prepare the curry sauce, mix all ingredients in a bowl.
Once the veggies are tender, add the Tofu noodles. You will want to pull them apart a bit to separate. Stir fry for a few minutes. Pour in the curry sauce and cook for an additional 2-3 minutes! Stir in Sriracha sauce for added spicy and heat.
Tons of flavor for very little calories! I do recommend including more protein to make this a complete meal.
