I am really excited to share with you a super simple recipe that I have been LOVING this spring. Peanut Butter Almond Protein Pudding! You can make this into a soft serve ‘ice cream’ by putting it in the freezer for a bit – just long enough for it to thicken up – but to be honest, I get so excited to eat it, that I almost never wait for it to actually start to freeze : )
1 TBPS PB2 (Powdered Peanut Butter)
2 oz (give or take) of Unsweetened Almond Coconut Milk (45 cals/8 ounces)
1 Scoop UMP – I prefer Vanilla

Mix together and enjoy! I like to fold in sliced strawberries too!
Top with sliced strawberries or whole berries.
