I know the title sounds pretty preposterous. I mean, let’s face it – Otis Spunkmeyer makes some pretty dang good tasting muffins. But, give them a try and judge for yourself…
1 Scoop Ultimate Muscle Protein
1/2 Cup Graham Flour
2 TSP Baking Powder
1/8 TSP Salt
1/4 TSP Vanilla
1/8 Cup Sugar Free Syrup
1/4 Cup Unsweetened Applesauce
1/4 Cup Water
1 TBSP (15 g) Mini Chocolate Chips (optional)
Protein: 12 g
Carbs: 28 g
Fiber: 3 g
Fat: 4 g
Combine all dry ingredients in a mixing bowl and mix thoroughly.
Fold in wet ingredients.
You may need to adjust the amount of water depending on the thickness of your batter.
Add in mini chocolate chips and stir.
In a cupcake pan, either use cupcake holders or spray the openings with a nonstick spray like Pam.
Fill each cupcake opening 2/3 of the way.
Bake at 380 degrees for 12-14 minutes.
Check periodically to be sure they do not overcook!
Muffins are done when the top turns a light golden brown. Do the toothpick test, insert a toothpick in the center of the muffin. If it comes out clean, they’re done!
