Be creative! You can add in any type of nuts for a punch of healthy fats to these Pumped Up Pumpkin Bars!
2 Scoops Ultimate Muscle Protein – Vanilla
1.5 Cups Oats, uncooked
3 TSP Pumpkin Pie Spice
1/2 TSP Nutmeg
2 TSP Baking Powder
2 TSP Truvia or Splenda (optional)
1 Pinch Salt
1 Cup Pumpkin
3 Egg Whites
Enough water to make like a batter
Protein: 12 g
Carbs: 18 g
Fiber: 4 g
Fats: 2 g
Combine all dry ingredients in a large mixing bowl and mix together thoroughly.
Fold in wet ingredients and enough water to bring the mixture to a batter consistency.
Spray a 8×8 baking pan lightly with a non-stick cooking spray like Pam. Pour batter into baking pan.
Bake at 375 degree for 17-19 mins until firm to the touch.
Once cooled, cut into 6 bars and enjoy!
