Overcoming Celiac and Embracing a Vegetarian Lifestyle with Amy Contreras
Amy Contreras spent years gaining weight, being bloated and experiencing stomach aches every time she ate. After finally discovering that she suffered from celiac disease, she was able to make food and exercise work for her body, not against it.
Amy’s holistic approach to both food and fitness has helped her accomplish her fitness goals and inspire others. I am honored to have shared Amy’s journey over the last 3 years as we have worked together periodically in my online training program for women. Amy is a contributing writer for Wanderlust.com. I’m a bit of a geek. I love cats & I love dinosaurs. I am an advocate in the tibetan community. I love life and have a passion for empowering woman to be all they can be. Embrace, Empower and Educate on healthy clean eating.
Transformation Info
I have changed so much throughout my weight loss transformation. After finding out I was allergic to gluten, soy and amongst many other things I had to make a change. Setting a big goal like competing was truly my biggest gift. I did this solely for the purpose of competing against myself. My faith grew stronger because I was the only one that was going to make a difference day in and day out. Now I feel like I can do anything.
During the first 5 months of our training, I went from 31% bodyfat to 17%! The change was incredible and I felt amazing!
Since then I have been able to maintain that bodyfat loss and stay within 3-5 lbs of my lowest weight. I love where my body is now!

What motivates you to maintain a healthy lifestyle?
I stay motivated by setting small goals for myself and most importantly speaking kindly to myself. I love the feeling of being totally aware and in touch with everything in my body. I am so thankful for full mobility in my body and I want to enjoy that for the rest of my life.
What role does fitness play in your life?
Fitness plays a huge role in my life. If I can be a motivation for someone to just start moving I feel like I have made a difference . Its my passion and the one thing in my life that I make a priority. It’s my stress reliever from the day and important for my vitality to be a positive example.
What unique challenges have you faced in reaching your fitness goals?
What is the best part about working with Julie Lohre?
Julie Lohre is the most caring woman who just knows what you are going thru. She says the most wonderful things when you think you can’t go on any longer. She will always answer all of my crazy questions and topics.
What is the worst part about working with Julie Lohre?
Is that she is not in California to meet in person.
How do you balance nutrition and clean eating? Favorite clean eating foods or recipes?
What does a typical workout look like for you?
- Monday-morning run on the beach then at night legs &abs
- Tuesday-a.m stairs at the beach for 40 min then at the gym in p.m shoulders, triceps
- Wednesday -60 mins of hiit cardio and stretching
- Thursday -a.m walk for 60 min then gym to do back and biceps
- Friday-legs
- Saturday -full body and usually a 10 min spin bike cool off
- Sunday -off
Favorite Healthy Recipe?
Gluten Free Raw Vegan Pineapple Cheesecake
Crust
- 1 cup almonds
- 1¼ cups dates, pitted
- 2 tbs of Flax
Cheesecake Filling
- 2 c. frozen pineapple
- 1½ cups cashews, soaked for 2-3 hours, preferably overnight
- 1½ cups Rhubarb
- ¼ cup + 1 Tbsp Walden’s Syrup or Agave
- ¼ cup fresh lemon juice
- ½ cup coconut cream
- ¼ cup coconut oil, melted
Directions:
Crust
Add dates to food processor or magic bullet.
Add raw almonds and flax ,blend till all ingredients are finely chopped and blended together.
Add mixture to a small round pan or pyrex pressing firmly into base of pan with the back of a spoon. Put in freezer for 5 mins while you blend the cheesecake filling.
“Cheesecake” Filling
Add all ingredients to clean food processor or blender. Blend until thoroughly creamy.
Pour cheesecake filling over crust.
Sprinkle unsweetened coconut over the top.
Place in the freezer and allow to set for 2-3 hours and serve.
